Step
Heat the oven to 180°C. Chop the vegetables into even sized chunks. Toss the vegetables and sausages in a baking pan with the oil and season with salt & pepper. Sprinkler over the chilli flakes.

Bake in the oven for 30 minutes until soft, turning once half way through cooking.
Step
Put the couscous in a large bowl and 5 minutes before vegetables and sausages are ready, pour enough stock to cover the couscous. Toss through the feta, lemon zest and season. Then, cover and leave until vegetables are ready.
Step
Remove the vegetables and sausages from the oven, cut the sausages into three and toss everything together with the herbs and couscous.
Step
Lightly sprinkle over balsamic vinegar and serve with a blob of creme fraiche on the side.
