Margherita Pizza with a Cauliflower Base

  • 1 head of cauliflower
  • 60g mozzarella
  • 15g parmesan
  • Salt & pepper, to taste
  • 1 large egg
  • Oregano
  • 2 cloves of garlic, minced or finely diced
  • Passata
  • Any toppings of your choice!



  1. Preheat your oven to 220°C / 200°C fan oven. Cut your cauliflower into evenly sized florets. Then blend in a food processor.


  2. Microwave the cauliflower for 2 minutes. Place cauliflower inside a tea towel and squeeze out as much water as possible. Being careful as it will be hot! Get as much water out as possible as this is crucial for the crust to come together.


  3. Add the drained cauliflower to a bowl and add the mozzarella, parmesan, large egg, garlic and oregano. Add salt and pepper to taste. Mix well.


  4. Line a tray with baking paper and add your dough mix. Spread mixture to create a thin pizza base.


  5. Pop into the oven for 12-14 minutes. Add your chosen toppings and pop back into the oven for a further 3-5 minutes!


  6. Slice and enjoy!


  7. Serve with a side salad, or if you’re feeling hungry add some garlic bread too.
