Turnip & Onion Gratin

Ingredients

  • 3 large hakurei or salad turnips
  • 2 medium onions
  • 150g cheddar cheese
  • 50g shaved parmesan
  • 2 slices of bread, made into fine breadcrumbs
  • 3 tbsp butter
  • 100ml milk
  • Fresh thyme
  • Salt & pepper, to taste
  • 1 tsp smoked paprika

Method

    Step

  1. Preheat oven to 200°C / 180°C fan oven

  2. Slice the turnips very finely (use a mandolin if you have one). Slice the onions thinly.

  3. Grate the cheeses and mix together. Use two thirds to layer and with the remaining third, mix in a separate bowl with the breadcrumbs and smoked paprika..

  4. Layer the turnips in a well greased oven proof casserole or gratin dish. Season and sprinkle with a layer of sliced onions and then the cheddar / parmesan mix. Add a sprinkle of herbs. Dot butter on the top.

  5. Repeat until all the turnips and onions are used, and pour over the milk.

  6. Top with the remaining cheese and breadcrumbs mix.

  7. Bake for 30 minutes, until the top is golden brown and the vegetables cooked through.
